I like that I’m getting into a habit of cooking on Saturdays. I actually enjoy it, so it isn’t anything for me to do it. Once school starts I’ll be taking 20 credits, so I won’t really have time to cook during the week, so Saturdays will have to do, so it’s nice to get used to it now.
Today I made:
Easy Frozen Pizzas
Bought 5 wheat pita breads (not local/organic unfortunately), topped them with organic pizza sauce, local mozzarella cheese and organic pepperoni. I made 2 cheese, 3 pepperoni, because I only like cheese but David will probably end up eating more pizzas then I will (ie for lunch, or when I’m out of town, etc.).
Easy Homemade Oat Bars
Same recipe as before, I just used 1/4 cup of pure maple syrup and 1/3 cup of honey this time (last time I substituted honey for maple syrup), and I forgot the flax seed, and the only extras I added was some chocolate chips I put through the processor to chop up – no fruit or nuts this time. I’m going to try freezing them – they’ll be a good snack when we’re drivin’ home to Illinois next weekend.
And that’s all I got to…we took the bus to Oshkosh today to do a “trial run” of what it’ll be like when I go to school – so that ate up most the day (one hour there, stopped and had lunch, 1 hour back), then we went grocery shopping, and then we went to see Evan Almighty (an extra date night this week!) at the cheap seats. But that’s okay, the meals this week are easy – so not much prep was needed.
