One great way to eat in season is berries. We look for whatever berries are in season at the Farmer’s Market and use them to make cobbler. We usually stick to making it when we’re having guests over, otherwise there’s a lot for 2 people! My mom uses canned peaches, but we’ve used fresh blueberries and blackberries.
Easy Fruit Cobbler (recipe via my mom)
4 (or More) cups fruit (any kind) sliced in the bottom of a 9 X 12 inch pan
(we used 1 pint of blueberries, but 2 pints of blackberries)
Beat together:
1 egg
1 cup sugar (or I’ve used sucanat)
1/2 cup oil
Add:
1 cup flour
1 tsp. baking powder
1/4 tsp. salt
1/2 cup milk or non-dairy milk
1 tsp. vanilla
Pour batter over fruit, and bake at 350 degrees for 30 – 40 minutes, or until golden brown and cake is “Spongie”. Serve with Whipped Cream, Ice Cream and/or Milk. It’s very versatile since even those who can’t eat dairy can use non-dairy milk.

i totally failed on remembering your anniversary on monday!
so, happy belated!! hope the two of you had a wonderful time together celebrating.
[i have a couple friends with birthdays on the 6th, too, and when i put them on my calendar, i kept thinking "i'm missing something. some one important." but i never figured it out until today, when one of my co-workers was looking for a gift for HER friend's anniversary.]
